Rigatoni – Spinach and Cheese filled with kids.

2 days of cooking fun.

 

Day 1.  We got out all of the vegies left in the fridge – Sweet potato, carrot, celery, tomato, capsicums and spinich.  We chopped these up and simmered in a pot to make a vegie sauce.  We browned some mince, added it to the pot.   Once this was all cooked we divided the mix in to two pots.  One for spicy mexican meat for that night and one to make into a pasta sauce for the next night  (pasta sauce is always nicer made a day ahead, +if it is cool you can make more things with it). 

Day 2. We chose to make Cheese and Spincah filled Rigatoni, with home made vegie filled sauce.   Yes a very messy and noisy meal which let us mix, process, spread, chop and pipe fill pasta shells.

Into the food processor went the cream cheese and some tasty cheese.  We took turns to press the processor buttons,  faster, slower, faster, slower, very exciting when you are 1 and 3.  Next we opened the shoot and added in the spinach. 

Zoe put  layer of pasta sauce on the bottom of the pan, Riley helped spread it out.  We then filled the pasta and layered it up.  Riley would give me shells and Zoe helped fill the piping bag and even had a few turns at filling the shells.  Very different than icing a cake, good practice for little onces who like using a piping bag. 

When it was all done,  we sprinkled some cheese on top and poped it into the oven.

This meal was full of so many yummy vegies and cheese my kids ate it all up with out a fuss.

    oh yum…..when are we coming for dinner??? Charlie has really started enjoying cooking too. Very rarely these days do i cook anything without his help – perhaps by the age of 5 he can cook for me!!!! Sam is just interested in licking spoons, beaters etc when i’m not looking charlie feels obliged to give him a taste!!!!

    Im sure he will Jacki. I hope that my kids enjoy it as much as I do too. Would be nice to have a cooking roster when they are older and know that I will be provided with a quality meal and not spaghetti on toast.
